vital root - denver's newest cucci creation

here at three sixty we are always up for new challenges, and that is exactly what we encountered at justin cucci's newest innovative restaurant - vital root located in the tennyson arts district. full of bold ideas and creative minds - cucci and company have envisioned and implemented a colorful vegetarian and vegan restaurant in the berkley neighborhood. in true cucci fashion - nothing is typical and the same can be said about the restaurant entrance where we collaborated to create a life size tree made solely of rebar and steel. this massive show piece houses climbing plants that will grow up and over to create a superficial tree with live vegetation to cover. no small feat - this tree was carefully and painstakingly crafted by welders one piece of rebar at a time and was envisioned to be a focal point in the front patio area. with seating wrapping the tree - diners can experience nature at their fingertips and in their meals. justin cucci truly imagined an organic connection to nature - which is prevalent in his new endeavor. an experience where the user is surrounded by slow food and natural vegetation. check it out for yourself - vital root is now open! hours are tues - thurs 11-9pm, fri - sat 11-10pm and sundays from 12-5pm. if you cant make it for the mouth watering food - drive by and check out the tree - its hard to miss!
